sweet potato soup

Hi Ya’ll! I’m so sorry that this post is so delayed! But I promise this is WELL worth the wait! I came across this recipe on Pinterest a few months back and never made it. But once it started getting colder I was craving a healthy soup option that I could bring to work and keep me full! I’ve also been trying to eat more plant based, and this is a great option! I tweaked the original recipe quite a bit, and this recipe always seems to be the best!

  • whole white onion (peeled, and diced)
  • olive oil
  • 2 sweet potatos, baked and peeled
  • 1 apple, seeded and cored
  • 1 carrot, halved
  • 1 1/2 cup organic veggie stock
  • ginger spices, tumeric, curry and cinnamon!
  1. In a saucepan, saute the onion until tender
  2. Place all the ingredients in a blender (I use my ninja) and I put them in the order that I have listed! It seems to be easier to blend!
  3. Pulse first, and then slowly increase the speed of the blender.
  4. Check to approve the consistency, and add more veggie stock or olive oil to get it to the consistency that you want!

THEN ENJOY!! This is the best soup I’ve ever made and it is so simple!
